Bánh canh chả cá (Đặc sản Bình Thuận)
Bánh canh chả cá là món ăn mang biểu tượng ẩm thực biển của Bình Thuận. Điểm khác biệt lớn nhất của món ăn này so với các vùng khác là phần nước dùng được hầm hoàn toàn từ xương cá biển (cá bớp, cá cam) thay vì xương heo hay bò, tạo nên vị ngọt thanh tự nhiên. Bánh canh sử dụng loại sợi dài, màu trắng đục, làm từ bột gạo. Món ăn được trình bày với sợi bánh mềm dai, chả cá chiên hoặc hấp, cá tươi, trứng, hành lá và chút ớt xay.
Nước dùng thanh ngọt, đậm đà vị biển. Chả cá ăn kèm có độ dai giòn, được làm từ cá thu, cá bơn, cá nhồng. Thực khách thường vắt thêm chanh, rắc tiêu và dùng kèm bánh mì nóng giòn.
